    Veggies-for-Veterans provides healthy food options for Veterans and community partners

    Phoenix area Veterans received sacks full of fresh produce thanks to a Shark Tank project and a host of sponsors, volunteers and VA staff. Held five times a year at the Carl T. Hayden VA, Veggies-for-Veterans is a program started by Dr. Izabel Kozak, assistant chief of staff for Community Medicine, bringing together community partners to offer healthy food choices for Veterans. “It’s a sight to see,” Kozak said. “The goal of our mobile-market is to help teach Veterans how to shop healthy and to encourage them to have healthy choices in their diet.” Kozak learned of a Shark

    Buffalo School parents, students push for new ‘Wellness Program,’ more healthy food options

    BUFFALO, N.Y. (WKBW) — In a normal year, the Buffalo School District would serve around 29,000 meals a day through the Child Nutrition Program, which is mostly federally funded. Since the pandemic started, the Food Services Director, Bridget O’Brien Wood, said they have only been preparing between 10,000 to 12,000 meals a day. “We get reimbursed for every meal we serve,” Wood said. “Because our meals have dropped significantly, we lost a lot of revenue because we don’t have the capacity to serve 29,000 kids if they are not in school.” The school district participates in the National School Lunch

    Wicker Park Vegan and Vegetarian Restaurant Takes Aim at Mundane Plant-Based Options

    It’s a pandemic pivot fairy tale in Wicker Park for Rodolfo Cuadros, the owner and chef of Amaru, a popular Latin restaurant that opened in 2019 in neighboring Bucktown. As COVID-19 suspended indoor dining, Cuadros and other restaurant owners last year searched for new ways to generate more money. He would partially convert Amaru into a ghost kitchen for a new restaurant, Bloom Vegetarian Kitchen, cooking up a meat-free menu with global flavors. “Our goal was to encourage families to try different and healthier foods,” Cuadros says.
